主要技术内容

本文件规定了工业化标准化中式高汤的技术要求、生产加工过程卫生要求、检验方法、检验规则、标志、包装、运输与贮存。工业化标准化中式高汤industrialized and standardized Chinese soup stocks中式高汤高级清汤以鲜（冻）畜、禽、水产等动物性原料为主要原料，添加或不添加香辛料、蔬菜等辅料，依据中国烹饪之制汤工艺、采用现代食品加工工艺和设备，经过离心法或肉茸漂汤法去除油脂生产的标准化产品。生产工艺流程将畜、禽、水产等原料经清洗、切块等预处理，进一步焯水或油炸；然后将原料放入煮汤罐中，按配方量加水，添加或不添加辅料，熬煮得到一汤；出一汤后，在肉渣中再加水，熬煮得到二汤。
